2 oz Door County Distillery Rock Island Rum
2 oz orange juice
2 oz pineapple juice
2 oz seltzer water
1 oz coconut milk
Orange slice for garnish
Combine all ingredients into a cocktail shaker filled with ice. Stir with a bar spoon until well combined. Strain into a glass filled with ice. Garnish with an orange slice.
Big Batch Version
4 cups Door County Distillery Rock Island Rum
4 cups orange juice
4 cups pineapple juice
2 cups coconut milk
1 Liter seltzer water
1 orange, thinly sliced
1 16 oz bag of frozen pineapple
Combine Rock Island Rum, orange juice, pineapple juice, coconut milk, and seltzer water in a large punchbowl or pitcher. Stir to combine. Float orange slices and pineapple chunks on top.
